What goes to Via sent-by comes from the so called "published name" of
the SIP transport. With PJSUA-LIB, you can override it by setting
pjsua_transport_config.public_addr field. Although, if you enable
STUN, PJSUA-LIB would override that with the STUN resolved address.

Failing to do that, you can always create a pjsip_module to manipulate
SIP messages that goes out/comes in from/to pjsip.
